Aunt Donna’s Lemon Squares Recipe

Family functions were never a hassle but a privilege!  Always super fun with the cousins and even better with the food… particularly the dips and desserts.  One staple was Aunt Donna’s Lemon Squares and an absolute favorite.  My mouth is watering just thinking of that sweet and tangy treat… mmmm lemon squares mmmm…

 Aunt Donna’s Lemon Squares

Crust:

2 cups flour

1/3 cup powdered sugar

1 cup butter (slightly softened)

 

Filling:

6 slightly beaten eggs

1 & 3/4 cups freshly squeezed lemon juice

1/4c flour plus 1/4 tsp baking powder

 

Put flour, butter and powdered sugar in food processor.  Process until crumbly.

Press into 13×9 pan and bake at 350 for 20 min or until lightly browned.

While crust is baking, prepare filling.

Mix eggs, sugar, lemon juice, flour and baking powder (do not over mix)

Pour over baked crust and return to over for approximately 20 min at 350.  Keep checking near end of baking time to remove as soon as filling doesn’t jiggle anymore.  Dust with powdered sugar when cool and enjoy!
